I love cookbooks and have quite a collection (not that I use them all to be honest!) and I think Scott might have rolled his eyes when I bought this one home – pretty sure he expected it to sit and gather dust with the others in our kitchen.
I’d actually come across Miguel some time before on Instagram and loved his easy, budget friendly takes on meals but its quite hard to remember things that I see on instagram – I much prefer a written recipe that I can follow easily.
Within a few days of buying it I was so glad I had – I tried three of the recipes that first week and they’ve become firm favourites in our house since; pork schnitzel, chicken katsu curry and the pork chop and colcannon. None of them take more than 30 minutes to cook and taste really good.
Since that first week I’ve dipped in and out of it quite a few times and everything I’ve tried has been really good – especially the pork chop in a mustard and leek sauce, it was delicious and uses hardly any ingredients. Miguel takes ‘complicated’ recipes and deconstructs them to make them simpler and using less ingredients – this helps keep them to a budget. Also the recipes are all for one serving which means its easy to multiply them for however many people you need to feed – I tend to make enough for six people as that gives us dinners and lunches for the next day which definitely helps with my budgeting as it means we aren’t buying expensive lunches at work.
I’m getting back to meal planning next week *finally* and am going to be adding the other recipes I’ve not yet tried into my weekly plans. One of the things I loved was that the book starts with a piece on how to shop smartly – this is something I really struggle with but I really do need to get a grip on it as there’s a lot that we need to start saving up for!
Are there any recipe books you would recommend? Particularly simple, quick and cheap!
